Whether we are frying our pooris or aloo-tikkis, making the tadka/tempering for our daals, or sautéing our sabzis – edible oil is an integral part of every meal and every Indian’s expenditure on food.
Traditionally, Indians use broadly two types of edible oils. The first is ‘vegetable’ oils obtained from crushing local oilseeds — mustard in northern and eastern India; groundnut in Gujarat, Maharashtra, Karnataka and Andhra Pradesh; sesame and groundnut in Tamil Nadu; and coconut in Kerala.
The second cooking oil medium is ‘animal’ fat, mainly desi ghee from milk. This is an expensive option that households exercise, maybe once a week or to make traditional sweets like mysore pak, halwa and ladoos on special occasions.
Today, like the other ‘oil’, petroleum, edible oil too is largely imported. As consumption soars due to increasing incomes and improving lifestyles, the growth in production of domestic edible oil has not been able to keep pace with the growing demand. Limited availability of oil seeds and shifting of acreage to other crops has further increased the demand supply gap. This gap is being met by imports from leading exporters Indonesia and Malaysia and account for almost 55-65% of the total oil consumption during past five years.
Around 40% of the edible oil market is fragmented and unbranded. While 20-25 big players such as Marico, Agro Tech Foods, Ruchi Soya, Adani Wilmar, Mother Dairy and Cargill India control over 60% of the edible oil market, there are about 200 small and medium regional players accounting for the balance in the sector. However, hygiene concerns, awareness and preference for healthy, fortified variants, and enhanced spending power are pushing up the market for branded cooking oil.
